Morning – Market Discovery

Your culinary guide welcomes you and takes you on a vibrant walk through one of Ethiopia's traditional markets. Experience the sights, sounds, and aromas of an authentic Ethiopian marketplace.

  • Learn how Ethiopians choose fresh vegetables, herbs, and legumes
  • Discover spices like berbere, mitmita, korarima, and niter kibbeh
  • Meet friendly vendors and taste seasonal produce
  • Select all the ingredients for today's cooking class

Guests will carry their own basket just like locals, creating a deeper connection to the meal ahead.

10:30 AM – 1:00 PM

Mid-Morning – Cooking Class Begins

Arrive at a welcoming traditional cooking space, where your chef introduces the secrets behind Ethiopia's world-famous dishes.

Hands-on Cooking Includes:

  • Making Shiro or Misir Wot – simmering lentils or chickpea flour with berbere
  • Preparing Doro Wot (optional) – marinating chicken in lemon, slow-cooking with onions, spices, and boiled eggs
  • Traditional Vegan Side Dishes – gomen (greens), atkilt (cabbage & carrots), salata
  • Mixing and baking Injera – learn how the fermented teff batter becomes Ethiopia's beloved sourdough flatbread

Guests chop, sauté, grind spices, and cook alongside their instructor, learning the rhythms and aromas of Ethiopian home cooking.

1:00 PM – 2:00 PM

Lunch – Enjoy Your Creation

Sit down together to enjoy a beautifully arranged injera platter featuring all the dishes you prepared.

Your Lunch Includes:

  • Homemade injera fresh from the mitad
  • Combination of wots and vegetable sides that you prepared
  • Fresh juice or soft drink
  • Local storytelling about food traditions & regional cuisines

2:00 PM – 3:00 PM

Afternoon – Spice Blending & Traditional Snacks

Learn how to toast and grind spices the Ethiopian way.

Activities:

  • Make your own small berbere blend to take home
  • Sample local snacks such as kolo, ambasha, or chechebsa
  • Explore the role of food in Ethiopian celebrations and fasting traditions

Perfect for guests who want deeper cultural understanding of Ethiopian food traditions.

3:00 PM – 5:00 PM

The Coffee Ceremony – Cultural Highlight

No Ethiopian culinary experience is complete without the legendary Coffee Ceremony. This traditional ritual is the heart of Ethiopian hospitality.

Ceremony Steps:

  • Washing and hand-roasting green coffee beans over charcoal
  • Inhaling the aroma as the beans are shown to guests
  • Grinding the beans using a traditional mortar
  • Brewing in a jebena, the clay coffee pot
  • Serving three rounds of coffee: Abol (first and strongest), Tona (second), Bereka (third, symbolizing blessing)

Traditional incense fills the air while guests enjoy popcorn and conversation—an unforgettable cultural moment.
